Ingredients

1 teaspoon Wildtree Roasted Garlic Grapeseed Oil

1 small yellow onion, finely diced

1 1/2 cups baby carrots, cut into half moons

1 red bell pepper

1 teaspoon minced, garlic

1 1/2 cups green beans, trimmed and cut in half

2 cups low-sodium tomato juice

2 (14.5 ounce) cans no-salt-added diced tomatoes

1 1/2 cups frozen peas  

1 1/2 cups frozen corn  

 

Method of Preparation

Heat Roasted Garlic Grapeseed Oil in a large pot over medium heat. Add onions and cook until they are soft and transluscent. Add carrots, red bell pepper, and green beans. Continue to cook the vegetable mixture for about 5 minutes. Add the cans of diced tomato, Red Bell Pepper Sauce, and tomato juice. Add frozen corn and peas and simmer soup for 30 minutes.
