1 tablespoon warm water

2 cups arugula

½ grated Parmesan cheese

¼ cup walnuts

½ lemon, juiced

4 tablespoons Hickory Smoked Grapeseed Oil, divided

1 yellow onion, diced

3 celery stalks

6 cups low sodium vegetable stock

1 (15.5 ounce) can chickpeas, drained and rinsed

1 cup ditalini pasta

1 bunch asparagus, trimmed and cut into 2-inch pieces

1 cup chopped broccoli

3 scallions, sliced

Method of Preparation

Hydrate 1 tablespoon Bruschetta Blend in warm water. Add hydrated Bruschetta Blend, arugula, Parmesan, walnuts, lemon juice, and 3 tablespoons Hickory Smoked Grapeseed Oil to a food processor. Blend until smooth; set aside. Heat remaining 1 tablespoon Hickory Smoked Grapeseed Oil in a large saucepan over medium heat. Add onion and celery and sauté for 5 minutes. Stir in vegetable stock, chickpeas, and remaining 1 tablespoon Bruschetta Blend. Simmer for about 10 minutes or until vegetables are tender. Stir in ditalini pasta; cook for 5 minutes. Add asparagus and broccoli and cook for another 5 minutes or until pasta and vegetables are tender. Stir in scallions. Serve soup with arugula pesto and additional Parmesan if desired.
