Method of Preparation

Heat ½ tablespoon Natural Grapeseed Oil in a 10-inch nonstick skillet over medium-high heat. Season chicken with salt and pepper if desired. Cook chicken for about 4 minutes on each side or until cooked through: 165°F. Transfer to a cutting board to cool. Shred or dice; set aside. Meanwhile, heat remaining 1 tablespoon Natural Grapeseed Oil in a large saucepan over medium heat. Add the onion and sauté for 5 minutes. Add potatoes and chicken broth. Bring to a boil, cook until potatoes are tender. Puree mixture until smooth. Add broccoli, carrots, and chicken. Simmer until vegetables are tender. Stir in milk and Cheddar and Herb Skillet Meal. Cook over medium heat until heated through. Puree slightly to blend in broccoli if desired. Serve with shredded cheddar if desired.
