Ingredients

1/2 cup honey

1/2 cup brown sugar

1 tablespoon Hearty Oatmeal Mix-In: Sugar & Spice

2 tablespoons dijon

4 pound bone-in ham, fully cooked

2 pounds russet potatoes, peeled

6 tablespoons unsalted butter, melted, divided

3 teaspoons Rancher Steak Rub

1 leek

3 cups shredded gouda cheese

2 bunches asparagus, trimmed

1 tablespoon Natural Grapeseed Oil

2 teaspoons Mediterranean Dry Rub

Method of Preparation

Combine honey, brown sugar, water, dijon, and Hearty Oatmeal Mix-In: Sugar & Spice in a small saucepan. Heat until sugar is dissolved. Place ham in slow cooker and pour sauce over ham. Cover and cook on low for 4 hours or until heated through: 140 degrees F. Baste every 30 minutes. Cut a piece of parchment paper to fit in the bottom of an 8-inch springform pan. Using a mandolin or a sharp knife, thinly slice potatoes. Layer 1/4 of the potatoes in the bottom of the pan. Drizzle 2 tablespoons of the butter over the potatoes, season with 1 teaspoon Rancher Steak Rub, top with 1/3 of the leeks, and 1/4 of the shredded cheese. Repeat this process 2 more times. Top with remaining sliced potatoes. Place pan on a baking sheet and bake potatoes for about 1 hour or until tender. Top with remaining shredded cheese and return to oven until cheese is melted. Remove from oven and let rest in pan for 10 minutes. Meanwhile, spread asparagus on a sheet pan and toss with Natural Grapeseed Oil and Mediterranean Dry Rub. Bake for 10-15 minutes or until tender. Remove ring from springform pan. Place and inverted plate on top of potatoes and flip so potatoes are on the plate. Remove parchment paper. Cut into 8 slices. Slice ham. Serve with potatoes and asparagus.
