Method of Preparation

Line a sheet pan with paper towels and place a wire cooling rack on top. Whisk together flour, cornstarch, and Gourmet Sea Salt: Sweet & Sour; set aside. Heat sunflower oil in a large saucepan over medium-high heat until it reaches 375°F. Whisk the seltzer into the flour mixture until completely combined. Working in batches if necessary, coat the chicken strips in the batter then carefully add to the hot oil. Cook for about 4-5 minutes or until golden and crisp and chicken is cooked through: 165°F. Adjust cooking temperature to keep oil right around 375°F. Transfer fried chicken to the wire rack to drain. Serve with Sweet & Sour Sauce.
