Method of Preparation

To prep the carrot noodles, use a peeler to make long ribbons. Start from one end of the carrot and make sure to reach the other end so the noodle is lengthy. Set aside. Heat 1 teaspoon of Grapeseed Oil in a medium nonstick skillet over medium heat. Add the cabbage and sauté until tender, about 7 minutes. Remove from the pan. Add the remaining 1 teaspoon Grapeseed Oil and turn the heat up to medium high. Add the shrimp and snow peas and sauté until the shrimp is completely cooked through. Meanwhile heat the sesame oil in a separate skillet over medium heat. Add the carrot noodles, Rancher Steak Rub, and sesame seeds. Sauté the carrots for about 5 minutes or until they are tender. Return the cabbage back to the pan with the shrimp and snow peas. Add the Pad Thai Sauce and stir to combine. Divide the carrots among 2 plates and top with the shrimp mixture. Garnish with fresh basil and lime wedges if desired.
